I bought some honey in bulk.....

Subject: I bought some honey in bulk.....

It came in plastic tubs, like a large margarine container.
I'm not sure it will stay fresh for a long period of time in there.
No safety type seal, just the plastic lid.
I was thinking of transferring it into some quart canning jars.
If I do, do you think I need to sterilize them first?
Would you transfer them out of the plastic into the glass?

So, I'll have to hunt around for some.

Try a hardware store. Ours have canning supplies year round. Or the farm and fleet.

We used to buy it in gallon jugs and just transferred to a smaller, plastic container for ease of using, like those honey bears with a flip top. But recently we've only purchased it in qt size glass jars. I am considering buying our local bee keepers 5 gal bucket of honey. I'd consider pouring those in sterilize canning jars, though.

I'm just curious. What is all the honey for? I only use honey in my tea so i'm a little clueless on why people stock up on honey. Maybe there's something i'm missing out on?

Honey is used in making bread, and it's also a natural sweetener in just about anything. It's more healthful than sugar.

Oh, I didn't know it was used in making all bread. I though it was just in that honey oat bread. I've obviously never made bread before, but I plan on trying it soon because it sounds a lot better than store bought. I hate the taste of wheat bread, I can only eat white, but I think homemade wheat bread would be a lot better than store bought wheat, so I will try it and I might actually like it. I love this message board because I am so clueless about stuff like this, but I am learning so much about different grains and how to make stuff from scratch which i'm sure my husband and kids will appreciate too. Thanks for answering my stupid question. I have lots of those.

I use local raw honey (not the processed junk) in all my baking. Especially bread. I prefer it as a sweetener in most cases. Even in canning. I can my peaches in honey syrup rather than sugar syrup.

I bought some honey at costco a while back,
it's in a large plastis bottle.
Does anyone know what to do when it hardens up?
I was told that it's still good and I should just set the bottle
in a pot of hot water for a while,but am not sure I trust it.

Monty--that advice is very good. My brother is a bee-keeper and I get lots of honey from him. When it crystalizes, set the container is a pan of water, and put it on the lowest setting of your stove. You may have to leave it there all day, refilling the water level as needed. But this will gently warm the honey and bring it back to liquid. Or you can use the crystalized honey in recipes as it is easier to measure.
Whatever you do, DO NOT heat in a microwave.

I usually heat the entire container, that is why it may take all day. If you heat just a small amount, take it out of the crystalized container and heat in something else. Just heat slowly and gently.

I've reheated multiple times before and it's been fine. But I usually get the big bucket of honey and pour some into a mason jar for regular use, and that's all I end up heating if it crystalizes.
